Pairs perfectly for aperitif, tapas, seafood, cheese and desserts.

Technical Data

Grape variety: 100% Verdejo.

Protected Geographical Indication:  D.O. La Mancha.
Preparation: After destemming and presseing, the grapes are vatted at low temperature for a few hours in Ganimede® tanks where the maceration of the sinks takes place in a CO2-saturated atmosphere. Subsequently the free-run juice is racked and ferments at very low temperatures until the right sugar content is reached, at which time the fermentation process is interrupted by filtering the vin bourru wine and chilling it at a very low termperature.
